Another Autumn Recipe: Pumpkin Butterscotch Muffins

I’m here posting food and displays again – this time in the true spirit of October.

Pumpkin Butterscotch Muffins.

My sister actually came across the recipe on Facebook weeks ago and tagged me in it, knowing how much I love butterscotch. And I was needing something else do a blog on for the month (let’s just say my manifestations and dream life are still in the works), so yes I’m shoving more baked goods in your face.

These muffins would be great to make anytime in fall; I of course chose to dress them up in some spooky attire with adorable cupcake liners and an appetizer tray I bought from Walmart.

My muffins came out very dense and very moist. So moist they created a bit of a mess with butterscotch oozing onto the baking tin and the liners on the muffins themselves being a bit slimy!
They were done though, trust me, and the taste was worth the mess.

Pumpkin Butterscotch Muffins

– 1 3/4 cups all-purpose flour

– 1/2 cup packed brown sugar

– 1/3 cup white sugar

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ground ginger

– 1/2 teaspoon ground nutmeg

– 1/4 teaspoon allspice

– 1/2 teaspoon salt

– 1 teaspoon baking soda

– 1/4 teaspoon baking powder

– 2 eggs

– 1 cup canned pumpkin

– 1/2 cup butter, melted

– 1 1/2 cups butterscotch chips

– 1 tablespoon Vegetable oil

(*I also added in about 1 teaspoon Mexican Vanilla with the “wet ingredients” because I just have a habit of putting vanilla in everything sweet I bake)

Preheat oven to 350 degrees and place cupcake liners in a 12-cup muffin tin.
In a large bowl, whisk together flour, both sugars, spices, salt, baking soda, and baking powder.
In a medium bowl, whisk together eggs, pumpkin, melted butter, and vegetable oil.
Add wet ingredients to dry and stir just until mixed. Stir in butterscotch chips.
Divide batter evenly between the 12 cups. Bake 20 to 22 minutes.
